Make your own Organic Vanilla French Toast!

ZZZ... It's odd, lately everyone I meet seems to be so tired! Maybe it's the change in seasons, maybe it's getting back into the daily school routine for some, or maybe it's the anticipation of the gray days that come with our fabulous B.C. Winters. Maybe it's just me.

But I've also noticed that very few people make the time for a GOOD breakfast anymore (coffee does not count- sorry). With all of the focus on active healthy living and caring for our environment, the most important meal of the day has somehow fallen by the wayside. But we need this endangered meal more than ever- our lifestyles are increasingly hectic and we often cram more activities into our days than hours.

With the mad dash to make it out the door on time, it may also be difficult and time consuming to prepare a healthy meal in the morning. So, lucky ducks that you are I have provided you with a delicious, stick to your ribs, kid's-won't-even-know-it's-healthy, fast breakfast! Enjoy!

FRENCH VANILLA FRENCH TOAST (yum)
6 slices Whole wheat cinnamon raisin bread
Vanilla low-fat organic yogurt (soy yogurt works great as well)
1/4c. Skim milk (organic soy works here too)
2 Free Range organic Eggs
1/4tsp. Ground cinnamon
1/4tsp. Ground nutmeg
1 tsp. Vanilla
salt to taste

In a mixing bowl, beat together eggs, yogurt, milk, cinnamon, nutmeg, vanilla and salt. Heat a lightly greased pan or skillet to medium-high. Dunk cinnamon raisin bread into egg mixture to coat each side. Cook on skillet, flip once to ensure each side is a tasty golden color. Serve hot with your choice of real maple syrup or fresh berries.
